A metabolic syndrome is a group of health problems that increase the risk of degenerative diseases. One effort to prevent metabolic syndrome is consuming foods that contain complex carbohydrates, such as tubers. Bulbs can be consumed directly or processed in other forms. One of the processed tubers' products is formed as rice analogues to ease consumption. This study aims to observe the nutritional composition of rice analogues and its carbohydrate components. The results show that the energy contained in rice analogues made from purple sweet potato, arrowroot, and taro are 377%, 372%, and 371%, respectively, in 100 grams of ingredients. Overall, purple sweet potato-based rice analogues have the highest energy, fat, and carbohydrate content compared to the other two types of bulbs. At the same time, the highest protein composition is found in taro-based rice analogues. However, further investigation related to more suitable formulations and glycemic index of rice analogues is required. © 2023 American Institute of Physics Inc.. All rights reserved.
