The Inhibitory Power of Watermelon-Cinnamon Powder Mixture Against Pancreatic Lipase and Its Organoleptic Properties

Abstract

The purpose of this study was to investigate (1) the chemical content of the endocarp-mesocarp watermelon powder, (2) the inhibitory power of watermelon against pancreatic lipase enzyme and its organoleptic properties, and (3) the inhibitory power of mixture of watermelon and cinnamon against pancreatic lipase enzyme and its organoleptic properties. The research was carried out in the following stages: 1) the preparation of watermelon powder; 2) the phytochemical analysis of watermelon powder, 3) analysis of the inhibitory power of the watermelon powder herbal drinks on pancreatic lipase enzymes and their organoleptic properties, and 4) analysis of the inhibitory power of the watermelon and cinnamon powders herbal drinks to the pancreatic lipase enzyme and their organoleptic properties. The results showed that: (1) the chemical content of watermelon powder is flavonoids, alkaloids, polyphenols, and saponins, (2) the inhibitory power of the watermelon herbal drink against pancreatic lipase is slightly below Orlistat tablet while its organoleptic properties is less favorable; and (3) the inhibitory power of the watermelon-cinnamon mixture herbal drink against pancreatic lipase enzyme is also slightly below Orlistat tablet and its organoleptic properties is moderately favorable.
